Healthy sheet pan chicken fajitas with peppers and avocado

Some dinners are easier when everyone gets to finish their own plate.

Fajitas are one of those dinners in our house.

I can put one sheet pan in the middle of the table with warm chicken, peppers, and onions, add a few bowls of toppings, and let everyone build exactly what they want.

Someone wants avocado. Someone else wants extra cheese. Someone insists that onions have somehow become unacceptable since last Tuesday.

Fine.

Dinner still works.

These healthy sheet pan chicken fajitas take about 30 minutes from start to finish, require very little cleanup, and are especially useful on busy school nights when nobody needs another complicated decision.

Ingredients for healthy sheet pan chicken fajitas

Instructions

1. Preheat the oven

Preheat your oven to 425°F (220°C).

Line a large rimmed sheet pan with parchment paper or lightly coat it with cooking spray.

2. Slice everything evenly

Cut the chicken breasts into thin strips.

Slice the peppers and red onion into strips of roughly the same thickness.

This isn’t just for appearance. Similar-sized pieces cook more evenly.

3. Make the fajita seasoning

Combine the chili powder, cumin, smoked paprika, garlic powder, oregano, onion powder, salt, and black pepper in a small bowl.

4. Season everything

Place the chicken, peppers, and onion on the sheet pan.

Drizzle with olive oil and sprinkle the fajita seasoning evenly over everything.

Use clean hands or tongs to toss until the chicken and vegetables are well coated.

Spread everything into an even layer.

5. Roast

Bake for approximately 18–22 minutes, tossing everything once about halfway through.

Cook until the vegetables are tender with lightly browned edges and the chicken reaches an internal temperature of 165°F (74°C).

6. Finish with lime

Remove the sheet pan from the oven.

Immediately squeeze fresh lime juice over the chicken and vegetables.

Give everything one final toss.

7. Build your fajitas

Warm the tortillas and bring the sheet pan to the table.

Let everyone build their own fajitas with avocado, Greek yogurt, cilantro, salsa, cheese, and additional lime.

Sarah’s Tip

Don’t crowd everything into the center of the pan.

Spread the chicken and vegetables into a relatively even layer.

When ingredients are piled on top of one another, they trap steam. You’ll still cook dinner, but you’ll miss those slightly browned edges that make sheet pan fajitas taste much better.

If your sheet pan is small, use two pans instead.

The Easiest Way to Make This Kid-Friendly

This is one reason I particularly like fajitas for families.

You don’t have to decide what everybody eats.

Put the components on the table separately and let everyone choose.

A child might eat chicken, tortilla, and cheese today and decide bell peppers aren’t terrible three months from now.

I’ll take the win.

For children who don’t like much spice, reduce the chili powder slightly. Adults can add hot sauce or sliced jalapeños afterward.

Make It a Back-to-School Dinner

You can do most of the preparation earlier in the day.

Slice the chicken and vegetables and store them separately in airtight containers in the refrigerator.

Mix the seasoning in a small bowl.

When dinner approaches, all that’s left is tossing everything together and putting the pan in the oven.

That’s particularly useful on evenings filled with homework, activities, forgotten permission slips, and the sudden announcement that something apparently needs to be brought to school tomorrow.

What to Serve With Chicken Fajitas

Fajitas can easily be the entire meal, but you can add:

  • Brown rice
  • Black beans
  • Corn
  • Green salad
  • Tomato and avocado salad
  • Roasted sweet potatoes

What to Do With Leftovers

This is where the recipe earns another point.

Don’t feel obligated to make fajitas again tomorrow.

Use the leftover chicken and vegetables in:

  • Rice bowls
  • Salads
  • Quesadillas
  • Wraps
  • Scrambled eggs
  • Lunch boxes

For an easy lunch, add brown rice, leftover fajita chicken and vegetables, black beans, and avocado to a container.

One dinner has suddenly become tomorrow’s lunch.

Storage

Store leftover chicken and vegetables in an airtight container in the refrigerator for up to 3–4 days.

Keep tortillas and fresh toppings separate.

Reheat the chicken mixture briefly in a skillet or microwave until thoroughly heated.

FAQ

Can you cook chicken fajitas on a sheet pan?

Yes. Slice the chicken and vegetables into relatively even strips, season them, and spread everything across a large sheet pan. Baking at high heat allows the chicken to cook while the vegetables soften and develop browned edges.

How long do chicken fajitas take in the oven?

Thinly sliced chicken fajitas generally take around 18–22 minutes at 425°F (220°C). Chicken should reach an internal temperature of 165°F (74°C).

How do you keep sheet pan fajitas from getting soggy?

Avoid overcrowding the sheet pan. When chicken and vegetables are piled together, trapped moisture causes them to steam rather than roast. Use two sheet pans if necessary.

Can I prepare sheet pan chicken fajitas ahead of time?

Yes. Slice the chicken and vegetables ahead of time and refrigerate them separately. You can also mix the fajita seasoning in advance, making final preparation especially quick.

What vegetables can I use in chicken fajitas?

Bell peppers and onions are traditional choices, but zucchini, mushrooms, corn, or other quick-cooking vegetables can also work.

What can I do with leftover chicken fajitas?

Leftover chicken and vegetables work well in rice bowls, salads, wraps, quesadillas, scrambled eggs, or lunch boxes.
